Ribeye Roast

  • 5 lb ribeye roast bone-in or boneless
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tbsp black pepper freshly ground
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped

Instructions
 

  • Preheat your oven to 450°F (230°C).
  • Rub the ribeye roast with olive oil, salt, pepper, minced garlic, and rosemary.
  • Place the roast in a roasting pan, fat side up.
  • Roast for 15 minutes at 450°F, then reduce the oven temperature to 325°F (163°C) and continue roasting for about 2 hours or until the internal temperature reaches 135°F (57°C) for medium-rare.
  • Remove from oven and let it rest for 15 minutes before slicing.

Notes

For best results, let the ribeye roast come to room temperature before cooking and use a meat thermometer for precise doneness.
