Ingredients
  

Cake Batter

  • 1 box yellow cake mix about 15.25 oz
  • 4 eggs
  • 1 cup vegetable oil
  • 1 can mandarin oranges undrained, about 11 oz

Frosting

  • 1 container whipped topping 8 oz, thawed
  • 1 box instant vanilla pudding mix 3.4 oz
  • 1 can crushed pineapple undrained, 20 oz

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  • In a large mixing bowl, combine cake mix, eggs, oil, and mandarin oranges with their juice. Beat until well combined.
  • Pour batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
  • Let the cake cool completely before frosting.
  • In a bowl, mix whipped topping, pudding mix, and crushed pineapple until smooth.
  • Frost the cooled cake and refrigerate until ready to serve.

Notes

For extra citrus flavor, garnish with additional mandarin slices or a sprinkle of orange zest.
