Instructions
Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
In a large mixing bowl, combine cake mix, eggs, oil, and mandarin oranges with their juice. Beat until well combined.
Pour batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
Let the cake cool completely before frosting.
In a bowl, mix whipped topping, pudding mix, and crushed pineapple until smooth.
Frost the cooled cake and refrigerate until ready to serve.
Notes
For extra citrus flavor, garnish with additional mandarin slices or a sprinkle of orange zest.
